The industrial food model with its emphasis on what marketers at least consider to be pretty apples, has basically reduced our russets to endangered status. At this point, saving russets is not just about preserving what varieties we have from the past in obscure collections, but making them a culturally appreciated item that is valued enough to keep making and improving them. I am pretty sure I will be introducing new russets over the next 20 years that are equal to most of the heirlooms and interesting in different ways. Get ready for red fleshed russets, savory russets, late hanging russets and who knows what else! In the past, russets have been some of the most appreciated and valued heirloom apples. There is no good reason that should change. SAVE THE RUSSETS!
